Best Banana Bread

According to my eight-year-old, this is the best chocolate chip banana muffin recipe. My husband is more inclined to the walnut banana bread version, and you can find directions for both in this recipe. Or you can go plain Jane, of course, and go for chocolate-chip-less and walnut-less loaves/muffins. Your call.

I have found that I can make the recipe with regular flour or spelt flour. Although I have only tried this brand:

Ingredients

1/2 cup butter
1 cup sugar
2 eggs
3 very ripe mashed bananas
1/4 cup vanilla yogurt
1 3/4 flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup large flake oats
Optional: 1 cup chopped walnuts OR 1 cup chocolate chips

Method

  1. Preheat oven to 350 degrees Fahrenheit.In a mixing bowl or stand mixer cream butter and sugar together.
  2. Add eggs, mix.
  3. Next, bananas and yogurt.
  4. Get a separate mixing bowl and combine together the dry ingredients (flour, baking soda, baking powder, salt and large flake oats). Use a whisk to make sure it’s all sifted together well.
  5. Combine dry ingredients to wet ingredients, mixing only to make the batter equally wet. Do not over mix.
  6. Now is when you must choose. Will it be walnuts or it will be chocolate chips? That is the question. Or will it be both? Whatever you choose, add it now.
  7. If making muffins, use liners or butter the tin. If making a loaf, butter the loaf pan well. Really well.
  8. Muffins: bake in a 350 Fahrenheit oven for 22-25 min. Loaves: bake in a 350 Fahrenheit oven for about 60-70 min. If you’re not sure if it’s done, quickly stick a tooth pick in and out — if it comes out clean, it’s done! Allow to cool some, and enjoy!

Notes

Seriously, bake that muffin at 350 degrees Fahrenheit. I know other recipes tell you to have a higher temperature but these muffins do better at 350 degrees.
